WINERY: Encomienda de Cervera

DESIGNATION OF ORIGIN: IGP Vino de la tierra de Castilla

GRAPE VARIETY: 100% Tempranillo

VINE: Own 60 Hectares located in the town Almagro (Ciudad Real)

CLIMATE: Encomienda de Cervera is located in the heart of the Massif Volcanic of Calatrava Estate, at an altitude between 750 and 850 meters above sea level, that borders with Sierra de Arzollar and the Cañada Real Soriana, among valleys and hills covered with oak trees and junipers, rosemary, thyme, and much more. The chequered orography, made up of its three river basins, creates a peculiar microclimate with cool nights, compensating for the heat of the day.

SOIL: Tempranillo Cencibel old vineyard has been expanded to 60 hectares, adding other Tempranillo clones certified by the Designation of Origin (D.O.), Rioja (RJ-51), Ribera del Duero (CL-79) and Toro (CL306). The best hills and altitudes have been chosen for each variety for their growing stage. In order to choose the best soil for each variety, extensive edaphologic studies have been performed on the soil to select among the volcanic, clay-calcareous, and rocky present at the estate. All vineyards are in trellis, oriented to the North/South.

WINEMAKING: Harvesting and crushing are both carried out by hand. Alcoholic fermentation takes place at maximum controlled temperatures in stainless steel tanks. Afterwards the wine is left to age for a period of 12 months in French and American oak barrels, obtaining the optimum blend of fruit and Wood.

AGEING: 12 months in new 50% American and 50% French oak barrels.

HARVEST: Hand-harvested in 17 kg. cases in the third week of October.

PRODUCTION: 50.000 bottles.

TASTING NOTES: This wine's main characteristic is its atypical blend, unique in the world, of different Tempranillo varieties from all over Spain, adapted to Calatrava climate. Strong on the nose, with a blend of ripe red berry scent, a hint of caramel and the roast coming from the excellent quality of the oakwood. Its complexity and excellence is the result of its different grape clones. Powerful and tasty in mouth, full body and voluminous. Greasy and delicate.
